Act as the culinary inspiration and leader of developing new recipes, dishes and menus

A senior culinary chef develops new recipes, dishes and menus. During the senior culinary chef apprenticeship, you’ll learn to research, responsibly source, develop and launch products to meet specification briefs. You’ll maintain high culinary standards, overseeing all food preparation and presentation to ensure quality and standards. As an apprentice, you’ll order and maintain the inventory of food and supplies for developed dishes and menus, while maintaining compliance and due diligence documentation within the food safety management system to ensure a safe and hygienic kitchen. You will be expected to work with food and equipment suppliers, developing recipes from scratch or brief, while determining the best presentation or packaging of food, maintaining or raising the profit margins on food. As a result, there is a significant leadership element to this role, as the culinary inspiration of a sole-trader patron leading the team to introduce new menus or dishes, or as the leader of a team of culinary chefs developing items for centralised distribution.

 

Duration: 24 months

Relevant school subjects: Food technology and business studies

Entry requirements for the senior culinary chef apprenticeship: Depend on employer, but likely A-levels or equivalent qualifications or relevant experience

Achievement upon completion: Level 4 (Higher)—equivalent to a foundation degree

Potential salary upon completion: £28,000
